Hippolyte Courty is a coffee expert, founder of L'Arbre à Café, author and consultant.
After an experience in medieval history as a researcher and then as a teacher, he led several activities in gastronomy and especially in wine. Tasting trainer, agent of winemakers, gastronomic critic and founder of the first natural wine cellar in Hong Kong, he founded L'Arbre à Café in 2008, pioneer of specialty coffee in France. Its ambition is to make coffee an exceptional product, offering high quality coffees to the world of gastronomy. Their credo is simple: to bring together the culinary, agricultural and social excellences. His inspirations are the world of wine for the valorization of the land and the work of the winemaker, and that of luxury, for excellence and full control of the value chain. In 15 years, L'Arbre à Café has established itself as the reference for gourmet coffee and offers specialty organic and biodynamic coffees purchased directly from the producer. His collaborations with renowned farmers like Jamison Savage of the Domaine Deborah in Panama, with chefs like Anne-Sophie Pic and pastry chefs like Pierre Hermé have definitely changed the reality and image of coffee in France.
Doing good, goodness and beauty is her daily mission. The Coffee Tree is of course a native impact company B Corp and Sociedad a Misión, which acts on the entire chain from planting through its estate, the Finca Mariposa.
Being an artisan producer and roaster means that the transmission of one of the fundamental values of its action. He is a frequent word-taker, runs a coffee school at L'Arbre à Café and has written two reference books on coffee: Café, Hachette, Paris, 2015, 2018; Les 101 mots du Café, Paris, 2017; and also writes for specialized journals.
He also created the Révélation cup, the first espresso cup, (SCA Best Product Award) and the L'Arbre à Café coffee grinder by Peugeot.
His commitment to quality, water and regenerative agriculture make him a recognized figure in the coffee world.
